  • 2 cups Ricotta Cheese can be substituted with cottage cheese
  • 1 cup Parmesan Cheese can be swapped with Pecorino Romano
  • 1 cup Mozzarella Cheese consider a non-dairy cheese for vegan option
  • 1 tablespoon Italian Seasoning or use a mix of oregano and basil
For the Sauce and Seasoning
  • 2 cups Marinara Sauce homemade or jarred works great
  • 2 tablespoons Olive Oil vegetable oil can be a substitute
  • 1 small Onion diced
  • 2 cloves Garlic freshly minced

For the Assembly
  • 9 Lasagna Noodles cooked until al dente
  • as needed Fresh Basil or Parsley optional for garnish

Step-by-Step Instructions
  1. Boil Noodles: Bring a large pot of water to a rolling boil, adding salt. Cook lasagna noodles until al dente, about 8 minutes; drain and lay flat to cool.
  2. Sauté Aromatics: Heat olive oil in a skillet over medium heat, add diced onion and sauté until translucent, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  3. Cook Beef: Add ground beef to the skillet; cook until browned, about 6 to 8 minutes. Season with salt, pepper, and Italian seasoning; drain excess fat.
  4. Mix Filling: In a bowl, combine ricotta, Parmesan, and mozzarella until smooth. Season with salt and pepper to taste.
  5. Preheat Oven: Preheat your oven to 375°F (190°C) for baking the roll-ups.
  6. Assemble Roll Ups: Spread marinara sauce in a baking dish. On each noodle, layer filling and beef mixture, roll tightly, and place seam-side down in the dish.
  7. Bake: Pour remaining marinara over roll-ups and sprinkle with mozzarella. Cover with foil, bake for 25 minutes, uncover and bake for an additional 10 minutes.
  8. Cool & Serve: Allow roll-ups to cool for 5 minutes before serving; garnish with basil or parsley if desired.
