- Boil Noodles: Bring a large pot of water to a rolling boil, adding salt. Cook lasagna noodles until al dente, about 8 minutes; drain and lay flat to cool.
- Sauté Aromatics: Heat olive oil in a skillet over medium heat, add diced onion and sauté until translucent, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Cook Beef: Add ground beef to the skillet; cook until browned, about 6 to 8 minutes. Season with salt, pepper, and Italian seasoning; drain excess fat.
- Mix Filling: In a bowl, combine ricotta, Parmesan, and mozzarella until smooth. Season with salt and pepper to taste.
- Preheat Oven: Preheat your oven to 375°F (190°C) for baking the roll-ups.
- Assemble Roll Ups: Spread marinara sauce in a baking dish. On each noodle, layer filling and beef mixture, roll tightly, and place seam-side down in the dish.
- Bake: Pour remaining marinara over roll-ups and sprinkle with mozzarella. Cover with foil, bake for 25 minutes, uncover and bake for an additional 10 minutes.
- Cool & Serve: Allow roll-ups to cool for 5 minutes before serving; garnish with basil or parsley if desired.
