Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease the baking dish.
  2. Sauté bell peppers and spinach in olive oil for about 5-7 minutes.
  3. Combine ricotta, egg, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  4. Layer ricotta mixture, zucchini, sautéed vegetables, and mozzarella in the baking dish.
  5. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes.
  6. Let the lasagna rest for 10 minutes before slicing and serving.
