Step-by-Step Instructions
  1. Preheat your oven to 250°F (120°C) and line three large baking sheets with parchment paper.
  2. In a large pot, heat 3 tablespoons of coconut oil over medium heat. Test the oil with a few kernels, then add the remaining kernels.
  3. Carefully transfer the freshly popped popcorn into three large bowls.
  4. In three separate microwave-safe bowls, combine 1 cup of white chocolate chips with 1 teaspoon of coconut oil in each.
  5. Once melted, add a few drops of food coloring to each bowl of white chocolate and stir until vibrant.
  6. Pour the colored chocolate over the popcorn in each bowl, mixing gently to coat.
  7. Spread the coated popcorn onto the prepared baking sheets and sprinkle with mix-ins.
  8. Bake for about 10 minutes to help set the chocolate, then let cool completely.
