- Preheat your oven to 250°F (120°C) and line three large baking sheets with parchment paper.
- In a large pot, heat 3 tablespoons of coconut oil over medium heat. Test the oil with a few kernels, then add the remaining kernels.
- Carefully transfer the freshly popped popcorn into three large bowls.
- In three separate microwave-safe bowls, combine 1 cup of white chocolate chips with 1 teaspoon of coconut oil in each.
- Once melted, add a few drops of food coloring to each bowl of white chocolate and stir until vibrant.
- Pour the colored chocolate over the popcorn in each bowl, mixing gently to coat.
- Spread the coated popcorn onto the prepared baking sheets and sprinkle with mix-ins.
- Bake for about 10 minutes to help set the chocolate, then let cool completely.
