Step-by-Step Instructions for Classic Fresh Tomato Sauce for Spaghetti
  1. Prep your ripe fresh tomatoes; wash, core, and score an 'X' on the bottom of each. Blanch for 30 seconds and transfer to an ice bath. Peel and dice them.
  2. Heat olive oil in a saucepan over medium heat. Sauté chopped onion for 5 minutes until soft and translucent. Add minced garlic for 1 minute.
  3. Add diced tomatoes and juices to the saucepan. Season with salt and pepper, then stir and bring to a gentle bubble.
  4. Reduce heat to low and let the sauce simmer for 30 minutes, stirring occasionally until thickened.
  5. In the last 5 minutes, fold in chopped fresh basil, stir well, and adjust seasoning if needed.
  6. Cook spaghetti in salted boiling water according to package instructions (8-10 minutes) until al dente. Drain.
  7. Add drained spaghetti to the saucepan with the sauce and toss to coat. Serve immediately with grated Parmesan cheese.
