Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Remove the husks from the fresh tomatillos and rinse them under water. Cut them in half and place on the baking sheet along with onion and pepper.
  3. Drizzle avocado oil over the tomatillos, onion, and peppers. Sprinkle with sea salt and toss until well coated.
  4. Roast the vegetables in the preheated oven for 15-20 minutes until slightly charred.
  5. Allow vegetables to cool, peel garlic, and remove stems from the peppers.
  6. In a food processor, combine roasted ingredients, remaining avocado oil, lime juice, cilantro, and sea salt. Blend until smooth.
  7. Taste and adjust seasonings before serving.
  8. Serve with tortilla chips or as a topping.
