- Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Remove the husks from the fresh tomatillos and rinse them under water. Cut them in half and place on the baking sheet along with onion and pepper.
- Drizzle avocado oil over the tomatillos, onion, and peppers. Sprinkle with sea salt and toss until well coated.
- Roast the vegetables in the preheated oven for 15-20 minutes until slightly charred.
- Allow vegetables to cool, peel garlic, and remove stems from the peppers.
- In a food processor, combine roasted ingredients, remaining avocado oil, lime juice, cilantro, and sea salt. Blend until smooth.
- Taste and adjust seasonings before serving.
- Serve with tortilla chips or as a topping.
