Preparation Steps
- Preheat your oven to 300°F (149°C). Pat the boneless chuck roast dry and season with kosher salt and ground black pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast for 5 minutes on each side until golden brown.
- Reduce heat and melt unsalted butter. Sauté sliced onions for 25-30 minutes until golden and caramelized.
- Add minced garlic and cook for 2 minutes. Deglaze with dry white wine, scraping the pot's bottom.
- Sprinkle in flour and stir. Gradually add beef broth, Worcestershire sauce, bay leaves, rosemary, and thyme.
- Return the roast to the pot, cover, and braise for 3.5 to 4 hours until fork-tender.
- Remove the pot from the oven, shred the beef, and discard excess fat and herbs.
- Spread shredded Gruyere cheese over the beef. Increase oven temperature to 400°F (204°C) and broil until cheese is melted and bubbly.
- Serve with mashed potatoes or baguette slices for dipping.
