Preparation Steps
- Brown the Ground Beef: In a large skillet over medium heat, brown 1 pound of ground beef for about 5–7 minutes, stirring occasionally until fully cooked. Drain excess fat.
- Combine Ingredients in the Slow Cooker: Transfer the browned beef to the slow cooker, then add in 1 cup of matchstick carrots, 1 finely chopped red bell pepper, and 2 chopped scallions. Stir gently.
- Prepare the Broth Mixture: In a medium bowl, whisk together 4 minced garlic cloves, 1/2 cup of low sodium soy sauce, 1 tablespoon of brown sugar, and 4 cups of chicken stock until the sugar dissolves. Pour over the ingredients in the slow cooker.
- Slow Cook the Ramen: Set your slow cooker to low heat and cook for 4–6 hours or on high for 2–3 hours until everything is tender.
- Add the Ramen Noodles: About 30 minutes before serving, break the ramen noodles into quarters and add them to the slow cooker.
- Serve and Garnish: Ladle the noodles into bowls, garnish with additional scallions and sesame seeds if desired, and serve hot.
