Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Pour the vegetable broth into a microwave-safe container and heat on high until boiling, approximately 4-5 minutes.
  3. In an 8x8 baking dish, combine the long grain brown rice, cannellini beans, pesto, salt, and cherry tomatoes. Stir well to mix evenly.
  4. Carefully pour the hot vegetable broth over the rice and bean mixture. Gently stir to incorporate the broth.
  5. Cover the dish with aluminum foil and bake in the oven for 65-75 minutes.
  6. Once done baking, remove the foil and check for any remaining liquid. If necessary, broil for an additional 5-10 minutes until the liquid evaporates.
  7. Sprinkle panko crumbs and grated parmesan cheese over the top, then broil for a few minutes until golden brown.
  8. Remove from the oven and optionally drizzle extra pesto over before serving.
