Mousse Instructions
- In a medium bowl, combine 1 cup of canned pumpkin, 1 cup of Greek yogurt, 2 tablespoons of honey or maple syrup, and 1 teaspoon of vanilla extract. Blend on medium speed for about 2-3 minutes until smooth and creamy.
- Add 1 teaspoon of cinnamon, 0.5 teaspoon of nutmeg, and 0.5 teaspoon of ginger to the mixture. Mix on low speed for an additional 1-2 minutes.
- Taste the mousse base. If desired, add an extra teaspoon of honey or maple syrup and mix again.
- Transfer the mousse to individual serving cups or a large bowl, cover tightly, and refrigerate for at least 30 minutes.
- Remove from the refrigerator, top with whipped cream and chopped nuts before serving.
