Step-by-Step Instructions for Mexican Street Corn Soup
- In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add the diced red onion and jalapeño, stirring occasionally for 3–4 minutes or until softened and fragrant. Toss in the minced garlic and cook for an additional 30 seconds, until aromatic.
