Preparation
- Preheat your oven to 325°F (163°C) and prepare a 9x13-inch pan lined with foil or parchment paper, sprayed with nonstick spray.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Mix in the egg, vanilla extract, and molasses until fully blended.
- In a separate bowl, whisk together dry ingredients: cinnamon, cloves, nutmeg, ground ginger, salt, flour, and baking soda. Gradually stir this into the wet mixture.
- Press the gingerbread batter into the prepared pan and bake for 20-22 minutes or until lightly golden and a toothpick comes out clean.
- Cool in the pan on a wire rack completely, about 30-40 minutes.
- To make the frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Spread the cream cheese frosting over the cooled gingerbread bars and cut into squares to serve.
