For the Muffin Batter
  • 2 cups all-purpose flour gluten-free flour works as a substitute

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 medium mashed banana very ripe bananas are ideal
  • 1 cup almond milk any plant-based milk can substitute
  • 1/3 cup coconut oil can be replaced with canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup chopped pecans leave them out for a nut-free version
For the Optional Topping
  • 2 tablespoons turbinado sugar adds sparkle and crunch
For the Optional Glaze
  • 1 cup confectioners' sugar can be skipped for lower sugar option
  • 2 tablespoons water adjust for consistency

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners and lightly spray them with cooking spray.
  2. In a medium bowl, combine all-purpose flour, light brown sugar, baking powder, salt, ground cinnamon, and ground nutmeg. Stir until well combined.
  3. In another bowl, mash very ripe bananas until smooth, then add almond milk, melted coconut oil, pure vanilla extract, and maple syrup. Whisk until fully combined.
  4. Gently fold the wet ingredients into the dry ingredients using a spatula. Add chopped pecans and fold them in carefully.
  5. Spoon the batter into the prepared muffin liners, filling each about 2/3 full. Sprinkle additional chopped pecans and turbinado sugar on top if desired.
  6. Bake for 18-20 minutes. Check for doneness with a toothpick; it should come out clean or with just a few crumbs.
  7. For the optional glaze, whisk together confectioners' sugar with a little water until smooth and drizzly. Drizzle over warm muffins before serving.
