  • 2 Eggs For vegan alternative, use flax eggs (1 flaxseed meal: 2.5 tablespoons water ratio).
  • 1 tbsp Pumpkin Pie Spice Mix your own with cinnamon, nutmeg, and ginger if necessary.
  • 1/2 tsp Salt Enhances flavor; do not omit.
  • 1 tsp Baking Powder Use fresh for best results.
  • 1/2 tsp Baking Soda Use fresh for best results.
For the Glaze
  • 1/2 cup Coconut Butter Coconut manna can also work well.
  • 1/4 tsp Nutmeg Optional but enhances overall taste.

Equipment

  • donut pan
  • Food Processor
  • small saucepan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease your donut pan with coconut oil.
  2. Dice the raw white sweet potato into small chunks and blend in a food processor until smooth. Add coconut flour, coconut sugar, arrowroot flour, maple syrup, coconut oil, eggs, pumpkin pie spice, salt, baking powder, and baking soda. Blend until fully combined.
  3. Fill the donut cavities in the prepared pan with the batter three-quarters full. Bake for approximately 30 minutes or until a toothpick comes out clean.
  4. Allow the donuts to cool for about 10 minutes before removing them from the pan onto a wire rack.
  5. Warm coconut butter in a small saucepan until drizzly. Combine with maple syrup, nutmeg, and boiling water to achieve desired consistency. Stir until smooth.
  6. Drizzle the prepared glaze over each cooled donut and allow it to set.
