Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. Incorporate the egg and vanilla extract, beating until well mixed.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the wet mixture until a smooth dough forms.
  5. Scoop about 2 tablespoons of dough, flatten it into a disc, and place half on the baking sheet.
  6. Add a teaspoon of jelly in the center of each disc and cover with another disc of dough. Seal the edges and crimp if desired.
  7. Bake for 12-15 minutes until the edges are golden brown. The centers should remain slightly soft.
