- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the peanut butter and unsalted butter until light and fluffy. Gradually add the sugars, mixing until creamy.
- Incorporate the egg and vanilla extract, beating until well mixed.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the wet mixture until a smooth dough forms.
- Scoop about 2 tablespoons of dough, flatten it into a disc, and place half on the baking sheet.
- Add a teaspoon of jelly in the center of each disc and cover with another disc of dough. Seal the edges and crimp if desired.
