For the Creamy Filling
  • 8 ounces Cream Cheese Low-fat cream cheese for a lighter version.
  • 1 cup Grated Cheddar Cheese
  • 1 cup Sour Cream Greek yogurt can be a healthier option.
  • 1 cup Chicken Stock Vegetable stock can be used for a vegetarian approach.
  • 1 teaspoon Sweet Paprika
For the Crunchy Topping
  • 1 cup Crispy Fried Jalapeños
  • 1 cup Panko Breadcrumbs Regular breadcrumbs or crushed crackers can be used in place.
  • 4 tablespoons Salted Butter

Method
 

Preparation Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, pour in olive oil and heat over medium heat. Add diced chicken and sauté for 6-8 minutes until cooked through.
  3. Add chili powder, ground cumin, kosher salt, black pepper, and jalapeños to the skillet. Cook for an additional 2-3 minutes until fragrant.
  4. In a mixing bowl, combine the cooked chicken with bacon, cream cheese, cheddar cheese, sour cream, chicken stock, and sweet paprika. Mix until creamy.
  5. Grease a casserole dish and spoon the mixture into it, spreading evenly.
  6. Sprinkle crispy jalapeños over the top followed by panko breadcrumbs and drizzle melted butter.
  7. Bake in the preheated oven for approximately 30-35 minutes until golden brown and bubbly.
  8. Let the casserole sit for 5-10 minutes before serving.
