  • 1 large Egg Binds the meatballs together.
  • 1/2 cup Breadcrumbs Panko adds extra lightness.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, fresh herbs, crumbled feta cheese, minced shallot, chopped garlic, egg, breadcrumbs, olive oil, lemon zest, and a pinch of kosher salt and black pepper. Mix gently until just combined.
  3. Portion out about 1.5 tablespoons of the chicken mixture for each meatball and roll them gently into balls, spacing them on the prepared baking sheet.
  4. Bake the meatballs for 16-20 minutes or until the internal temperature reaches 165°F (75°C).
  5. While baking, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped mint, dill, and salt and pepper in a bowl for tzatziki.
  6. Once baked, let the meatballs rest for a few minutes before serving hot with tzatziki on the side.
