Cooking Steps
- Preheat your oven to 325°F (165°C).
- In a large, heavy-bottomed pot, heat the vegetable oil and sear the beef chuck roast on all sides for about 5–7 minutes.
- Remove the beef, and sauté the sliced onion and minced garlic for 3–4 minutes until soft and fragrant.
- Pour in the beef broth, soy sauce, brown sugar, rice vinegar, gochujang, sesame oil, and ground ginger, stirring well.
- Return the seared beef to the pot, and add chopped carrots, halved potatoes, and sliced shiitake mushrooms around it.
- Cover the pot and roast for 3 to 4 hours until the beef is tender and easily flakes with a fork.
- Transfer the beef to a platter, skimming excess fat off the sauce, and garnish with green onions and sesame seeds.
- Serve warm and enjoy your Korean Style Pot Roast.
