Method
 

Cooking Steps
  1. Preheat your oven to 325°F (165°C).
  2. In a large, heavy-bottomed pot, heat the vegetable oil and sear the beef chuck roast on all sides for about 5–7 minutes.
  3. Remove the beef, and sauté the sliced onion and minced garlic for 3–4 minutes until soft and fragrant.
  4. Pour in the beef broth, soy sauce, brown sugar, rice vinegar, gochujang, sesame oil, and ground ginger, stirring well.
  5. Return the seared beef to the pot, and add chopped carrots, halved potatoes, and sliced shiitake mushrooms around it.
  6. Cover the pot and roast for 3 to 4 hours until the beef is tender and easily flakes with a fork.
  7. Transfer the beef to a platter, skimming excess fat off the sauce, and garnish with green onions and sesame seeds.
  8. Serve warm and enjoy your Korean Style Pot Roast.
