Step-by-Step Instructions
  1. Activate Yeast: In a medium mixing bowl, whisk together warm water, sugar, and active dry yeast. Let this mixture stand for about 10 minutes.
  2. Prepare Dough: In a stand mixer, combine eggs, evaporated milk, and vanilla extract. Gradually add flour and yeast mixture, then butter and salt, mixing until smooth.
  3. Chill Dough: Cover the dough and refrigerate for 2 to 24 hours.
  4. Heat Oil: In a deep frying pan, heat peanut oil to 360°F (182°C).
  5. Shape Beignets: Roll chilled dough to 1/4-inch thick and cut into 2.5-inch squares.
  6. Fry Beignets: Fry each square for about 1 minute on each side until golden brown. Drain on paper towels.
  7. Fill Beignets: Fill each beignet with lemon curd and dust with confectioners’ sugar.
