  • 1 cup Broccoli Florets Lightly steamed and finely chopped.
  • 1 cup Kale Can substitute with spinach or favorite leafy green.
  • 1 cup Carrots Finely chopped.
  • 1/2 cup Fresh Cilantro Can substitute with basil, parsley, or dill.
  • 1 ea Egg Beaten before mixing in.
  • 2 Tbsp Butter or Ghee Adds richness.
  • 1/4 cup Coconut Flour Adjust quantity if substituting.
  • 1 tsp Salt Taste as you go.
  • 1 tsp Garlic Powder Can use fresh garlic for more robust flavor.
  • 1/2 tsp Pepper Add as desired.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  2. Finely chop broccoli, kale, and carrots, ideally using a food processor.
  3. In a large mixing bowl, combine all ingredients until well incorporated.
  4. Shape the mixture into uniform meatballs, about 1-1.5 inches in diameter.
  5. Place meatballs on the baking sheet, spaced apart, and bake for 15-18 minutes until golden brown.
  6. Allow meatballs to cool for a few minutes before serving.
