Ingredients
  

Burrito Base
  • 4 pieces tortillas flour or corn; corn is gluten-free
  • 1 can beans (black or pinto) or lentils/chickpeas for vegan
  • 1 cup cheese (shredded) use plant-based cheese for dairy-free
  • 2 cups rice or quinoa/cauliflower rice for lower-carb
Flavor
  • 1 piece onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon seasoning (cumin)
  • 1 teaspoon seasoning (chili powder)
Extra Protein
  • 1 cup optional proteins (chicken, beef, tofu) use cooked, shredded varieties

Method
 

Sauté Aromatics
  1. Heat a large skillet over medium heat and add a splash of oil. Sauté chopped onion and minced garlic until soft and fragrant, about 3–4 minutes.
Cook the Filling
  1. Add chosen beans and cooked rice to the skillet, stir, and season with cumin and chili powder. Cook for 5–7 minutes until heated through.
Assemble the Burritos
  1. Lay out a warm tortilla, spoon filling onto the center, fold sides in, and roll tightly from the bottom.
Wrap and Freeze
  1. Wrap each burrito in foil or parchment paper, place in an airtight freezer bag, and freeze for up to three months.
Reheat for Enjoyment
  1. Microwave for 2–3 minutes or bake in a preheated oven at 375°F (190°C) for 20–25 minutes, flipping halfway.
