Preparation Steps
- Preheat your oven to 400°F (200°C). Gather your ingredients while the oven heats.
- Lightly grease a 9x13-inch baking dish with olive oil.
- Layer sliced tomatoes, onions, and bell peppers at the bottom of the greased baking dish.
- Season the white fish fillets with salt, pepper, oregano, and thyme.
- Place the seasoned fish fillets on top of the layered vegetables.
- Sprinkle minced garlic over the fish fillets.
- Drizzle olive oil over both the fish and layered vegetables.
- Add fresh lemon slices on top of the seasoned fish.
- Cover the baking dish with aluminum foil and place it in the preheated oven.
- Bake for 20 minutes, then remove foil and bake for an additional 5 to 10 minutes until fish flakes easily.
- Optionally, sprinkle fresh parsley on top before serving.
