  • 2 tablespoons Extra Virgin Olive Oil for sautéing
  • 1 medium Small Red Onion chopped
  • 1 medium Zucchini chopped
  • 1 medium Red Pepper chopped
  • 1 medium Green Pepper chopped
  • 1 cup Diced Tomatoes fresh or canned
  • 1 tablespoon Fresh Thyme chopped
  • 1 tablespoon Fresh Basil chopped
  • 1/2 cup Black Olives sliced
  • 1 cup Feta Cheese crumbled
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper to taste

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9 x 13 inch casserole dish.
  2. In a skillet, heat the olive oil and sauté the onions, zucchini, red pepper, and green pepper for 5-7 minutes until tender.
  3. Add the diced tomatoes, thyme, and basil to the sautéed vegetables and cook for an additional 2 minutes.
  4. In a bowl, whisk together the egg creations and fold in the vegetable mixture, olives, feta, salt, and pepper.
  5. Pour the combined mixture into the prepared casserole dish, spreading it evenly.
  6. Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is lightly browned.
  7. Let it cool for about 10 minutes before slicing and serving warm.
