Step-by-Step Instructions for Mediterranean Sheet Pan Chicken
  1. Cook the rice according to package directions, using a 1:2 ratio of rice to water.
  2. Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper.
  3. Chop the chicken tenders and Yukon Gold potatoes into uniform 1-inch pieces.
  4. Combine chicken, potatoes, olive oil, lemon zest, lemon juice, oregano, garlic powder, paprika, coriander, salt, black pepper, and red pepper flakes in a bowl and toss until well-coated.
