For the Steak Marinade
  • 1 lb Sirloin Steak 1-inch thick for optimal grilling
  • 3 tbsp Olive Oil can substitute with avocado oil
  • 2 cloves Garlic Cloves minced or powdered garlic can be used
  • 2 tbsp Lemon Juice fresh lemon juice preferred for flavor
  • 1 tbsp Dried Oregano fresh herbs can be substituted
  • 1 tbsp Dried Thyme fresh herbs can be substituted

For the Bowl Base
  • 2 cups Cooked Grains brown rice, quinoa, or cauliflower rice
  • 1 cup Roasted Chickpeas optional, can use canned chickpeas
For Toppings
  • 1 cup Cherry Tomatoes fresh and juicy
  • 1 cup Cucumber provides a refreshing crunch
  • 1/2 cup Red Onion soak in water if too strong
  • 1/2 cup Kalamata Olives provides healthy fats
  • 1/2 cup Feta Cheese omit for dairy-free option
For Tzatziki
  • 1 cup Greek Yogurt coconut yogurt can substitute
  • 2 tbsp Fresh Dill can swap with mint
  • 1 tbsp Honey omit for Whole30

Instructions
  1. Marinate the Steak: Whisk together olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper in a bowl. Add the sirloin steak and ensure it’s coated. Cover and marinate for at least 30 minutes or up to 4 hours.
  2. Prepare Tzatziki Sauce: In a separate bowl, combine Greek yogurt, chopped dill, minced garlic, lemon juice, and salt. Stir until creamy and refrigerate for at least 15 minutes.
  3. Make Vinaigrette: Whisk together olive oil, honey (if using), lemon juice, salt, and pepper in a bowl, adjusting to taste. Set aside.
  4. Cook the Steak: Heat a skillet over medium-high heat, sear the marinated steak for 4-5 minutes each side until medium-rare. Let it rest for 5 minutes before slicing thinly.
  5. Assemble the Bowl: Start with a base of cooked grains, layer sliced steak, add toppings, and drizzle with tzatziki and vinaigrette.
