Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, combine smooth peanut butter, unsalted butter, dark brown sugar, granulated sugar, and vanilla extract. Beat on medium speed until smooth and creamy, about 2-3 minutes.
  3. Incorporate the eggs one at a time, mixing well after each addition until fully integrated.
  4. Sprinkle in the baking powder, baking soda, and sea salt, stirring until just combined. Gradually mix in the all-purpose flour on low speed until the dough is soft but not sticky.
  5. Using a cookie scoop or tablespoon, portion out the dough into balls. Roll each in granulated sugar and place on prepared baking sheets, leaving space in between.
  6. Bake in the preheated oven for 12-13 minutes until edges are lightly golden. The centers should remain soft.
  7. Let cookies cool on the baking sheets for 20 minutes to set before transferring to a cooling rack.
  8. Once cooled, sprinkle with sea salt flakes if desired, and enjoy!
