  • 1 pound Ground beef or ground turkey or lentils for a vegetarian option
  • 1 can Black beans drained and well-rinsed
  • 1 cup Corn kernels fresh, frozen, or canned
For the Flavor
  • 2 tablespoons Taco seasoning adjust for spice if needed
  • 1 cup Salsa or enchilada sauce for variety
  • 1 medium Onion diced
  • 1 medium Red bell pepper chopped
For the Creaminess
  • 2 cups Shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 1 cup Sour cream optional but recommended

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C). Gather your ingredients and prep any vegetables.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and chopped red bell pepper, sautéing for about 5 minutes until tender.
  3. Add 1 pound of ground beef or turkey to the skillet and cook for 7-10 minutes until browned. Drain excess fat.
  4. Sprinkle in taco seasoning and pour in ½ cup of water, stirring to combine. Let simmer for 5 minutes on low heat.
  5. Add 1 can of drained black beans and 1 cup of corn kernels, stirring to mix, and cook for an additional 2-3 minutes.
  6. In a 9x13-inch baking dish, spread a layer of salsa on the bottom.
  7. Layer corn tortillas, then one-third of the meat mixture, followed by 1 cup of shredded cheese. Repeat this process two more times.
  8. Finish with remaining salsa and sprinkle cheese on top. Cover with aluminum foil.
  9. Bake covered for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is golden.
  10. Let cool for 10 minutes, garnish with cilantro, and serve with sour cream.
