- In a large mixing bowl, cream together the butter, light brown sugar, and vanilla extract until light and fluffy.
- Add eggs one at a time, mixing on low speed until fully incorporated.
- Sift in flour, baking soda, spices, and salt; mix until a soft dough forms.
- Roll out dough to 1/4 inch thick, cut shapes with a jack-o'-lantern cookie cutter, and freeze for 20 minutes.
- Preheat oven to 350°F (175°C). Bake cookies for 8 to 12 minutes until edges are golden.
- Brown additional butter and brush on cooled cookie tops, then sprinkle with cinnamon sugar.
