Whipped Layer Ingredients
  • 1 can Coconut Cream Use heavy cream for non-vegan.
  • 1 teaspoon Mint Extract Substitute with fresh mint leaves if desired.
  • 1 teaspoon Matcha Green Tea Powder Omit if absent or use spirulina for color.

Method
 

Pudding Preparation
  1. Combine 2 cups of almond milk, 1/2 cup of chia seeds, 1/3 cup of cocoa powder, and 2 tablespoons of maple syrup in a bowl. Whisk until combined and refrigerate for 4 hours or overnight.
  2. Scoop out the thick coconut cream into a bowl, add 1 teaspoon of mint extract and 1 teaspoon of matcha green tea powder. Mix well.
  3. Whip the coconut cream mixture on medium speed for 3-5 minutes until fluffy, then set aside.
  4. Layer the chia pudding in serving cups, adding about 1/2 cup per serving.
  5. Top with whipped coconut cream, smoothing it out for an appealing presentation.
  6. Chill for an additional 30 minutes or serve immediately with optional cocoa powder or chocolate shavings.
