- Begin by greasing a large mixing bowl with butter or cooking spray. Pour in 6 cups of Rice Krispies cereal.
- In a medium saucepan, melt 4 tablespoons of salted butter over low heat for about 2-3 minutes.
- Add 10 ounces of marshmallows to the melted butter and stir until about three-quarters are melted.
- Turn off heat, stir in 1 teaspoon of peppermint extract and 10 drops of green food coloring.
- Pour the melted mixture over the Rice Krispies in the greased bowl and gently stir to coat.
- Allow the mixture to cool for about 5-8 minutes, then fold in ¾ cup of mini chocolate chips.
- Transfer the mixture to a greased 8-inch square pan and press it down gently to form an even layer.
- Sprinkle the reserved mini chocolate chips on top and allow to cool at room temperature for about 30 minutes.
