Step-by-Step Instructions
  1. Begin by greasing a large mixing bowl with butter or cooking spray. Pour in 6 cups of Rice Krispies cereal.
  2. In a medium saucepan, melt 4 tablespoons of salted butter over low heat for about 2-3 minutes.
  3. Add 10 ounces of marshmallows to the melted butter and stir until about three-quarters are melted.
  4. Turn off heat, stir in 1 teaspoon of peppermint extract and 10 drops of green food coloring.
  5. Pour the melted mixture over the Rice Krispies in the greased bowl and gently stir to coat.
  6. Allow the mixture to cool for about 5-8 minutes, then fold in ¾ cup of mini chocolate chips.
  7. Transfer the mixture to a greased 8-inch square pan and press it down gently to form an even layer.
  8. Sprinkle the reserved mini chocolate chips on top and allow to cool at room temperature for about 30 minutes.
