Method
 

Step-by-Step Instructions
  1. In a medium pot, pour in your choice of broth and place it over medium heat. Warm gently for about 5 minutes.
  2. Grate fresh ginger and squeeze fresh lemon juice, reserving the zest for garnish if desired.
  3. In a small bowl, dissolve miso paste in a ladle of warm broth until smooth.
  4. Pour the miso mixture back into the pot with the warming broth and stir until integrated.
  5. Add lemon juice and red pepper flakes, stir, and let simmer for about 5 minutes.
  6. If using, add fresh greens and tofu or cooked edamame, simmer for an additional 2-3 minutes.
  7. Ladle into bowls and garnish with sesame oil or lemon zest if desired. Serve hot.
