  • 2 pieces Sweet Potatoes 200-250g each for even cooking
  • 2 cloves Garlic Minced or can use garlic powder
For the Miso Butter
  • 3 tablespoons Miso Brown or white, unpasteurized
  • 2 tablespoons Butter Softened
  • 1 teaspoon Sriracha Optional for spice
For Garnishing
  • 1 tablespoon Sesame Seeds Can substitute with chia or pumpkin seeds
  • 1 cup Arugula Fresh and peppery

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and prepare a greased baking tray.
  2. Wash and dry the sweet potatoes, then trim damaged areas and arrange them on the tray. Bake for about 30 minutes until tender.
  3. In a food processor, combine the softened butter, miso, garlic, and Sriracha. Blend until smooth to make miso butter.
  4. Remove the sweet potatoes from the oven, allow to cool slightly, then cut a slit down the center. Fill with miso butter.
  5. Sprinkle sesame seeds and serve with arugula salad drizzled with olive oil and lemon juice.
