Step-by-Step Instructions
  1. In a small bowl, combine 2½ teaspoons of ground cinnamon with 2 tablespoons of brown sugar and ¼ cup of granulated sugar. Mix thoroughly and set aside.
  2. In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon of baking soda, and ½ teaspoon of salt. Ensure there are no lumps.
  3. In a separate bowl, mix 1 cup of buttermilk, 1 egg, ¼ cup of canola oil, and the optional butter extract until fully combined.
  4. Gently pour the wet ingredients into the bowl of dry ingredients, stirring until just moistened. Be careful not to overmix.
  5. Prepare a 9x5 loaf pan by coating it with non-stick spray. Pour half of the batter into the pan, smoothing it out evenly. Sprinkle ⅔ of the cinnamon-sugar mixture over this layer, then pour the remaining batter on top.
  6. Using a knife or skewer, gently cut through the batter in a swirling motion to mix in the remaining cinnamon-sugar mixture on top.
  7. Preheat your oven to 350°F (175°C) and bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  8. Once baked, let the bread cool in the pan for at least 20 minutes before slicing.
