- In a small bowl, combine 2½ teaspoons of ground cinnamon with 2 tablespoons of brown sugar and ¼ cup of granulated sugar. Mix thoroughly and set aside.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon of baking soda, and ½ teaspoon of salt. Ensure there are no lumps.
- In a separate bowl, mix 1 cup of buttermilk, 1 egg, ¼ cup of canola oil, and the optional butter extract until fully combined.
- Gently pour the wet ingredients into the bowl of dry ingredients, stirring until just moistened. Be careful not to overmix.
- Prepare a 9x5 loaf pan by coating it with non-stick spray. Pour half of the batter into the pan, smoothing it out evenly. Sprinkle ⅔ of the cinnamon-sugar mixture over this layer, then pour the remaining batter on top.
- Using a knife or skewer, gently cut through the batter in a swirling motion to mix in the remaining cinnamon-sugar mixture on top.
- Preheat your oven to 350°F (175°C) and bake for 50–60 minutes, or until a toothpick inserted comes out clean.
