Method
 

Step-by-Step Instructions
  1. In a small bowl, mix together 1 tablespoon of ground cinnamon with 1/4 cup of brown sugar and 1/4 cup of granulated sugar. Set aside.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. In a separate medium bowl, whisk together 1 cup of buttermilk, 1 large egg, 1/4 cup of canola oil, and 1 teaspoon of butter extract (if using). Blend until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Pour half of the batter into a greased loaf pan, sprinkle 2/3 of the cinnamon sugar mixture, then add remaining batter and top with remaining cinnamon sugar.
  6. Preheat your oven to 350°F (175°C) and bake for 50-60 minutes until a toothpick comes out clean.
  7. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely for at least 20 minutes.
  8. For optional glaze, combine 1 cup of confectioners’ sugar with 2 tablespoons of milk and 1/2 teaspoon of vanilla extract; whisk until smooth and drizzle over cooled loaf.
