- In another bowl, mix white sugar and brown sugar. Add eggs, oil, milk, bourbon, maple extract, and vanilla extract, whisking until smooth.
- Fold in the mashed bananas into the wet mixture until smooth.
- Gradually combine the dry ingredients with the wet ingredients, mixing just until combined.
- Fold in the chopped toffee into the batter.
- Prepare loaf pans with cooking spray and pour in the batter.
- Bake for 55-60 minutes for standard loaves or 40-45 minutes for mini loaves.
- Let cool in the pan before transferring to a wire rack.
