Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it and lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar together until pale and fluffy, about 3-5 minutes.
  4. Add the eggs and vanilla extract to the creamed mixture and mix until well combined, about 2 minutes.
  5. Gradually mix in the buttermilk and pumpkin puree until smooth.
  6. Slowly add the dry ingredients to the wet mixture in three batches, mixing gently until just combined.
  7. Pour the batter into the prepared pan and bake for 35-38 minutes, or until a toothpick comes out clean.
  8. Let the cake cool in the pan for 30 minutes, then transfer to a wire rack to cool completely.
  9. Whisk together the coffee, whole milk, sweetened condensed milk, and pumpkin pie spice for the soak.
  10. Once the cake is cooled, poke holes in the top and pour the latte soak over it.
  11. In a clean bowl, whip the cream cheese until fluffy, then mix in the powdered sugar, espresso powder, and pumpkin pie spice.
