  6. Stir in Tomatoes and Peppers: Add chopped tomatoes and scotch bonnet pepper, cooking for 3-4 minutes.
  7. Return the Chicken: Add the browned chicken back into the pot and stir to coat.
  8. Combine the Liquids: Pour in coconut milk and chicken broth, stirring to combine.
  9. Add the Potatoes: Stir in cubed potatoes and return to a simmer.
  10. Simmer the Curry: Cover and let the curry simmer for 30-40 minutes, stirring occasionally.
  11. Final Touches: Stir in brown sugar and chopped scallions, cooking for an additional 3 minutes.
