Preparation
- Soak the wooden skewers in water for at least 1 hour to prevent burning.
- In a large mixing bowl, combine sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and pepper. Whisk until smooth.
- Trim and cut the boneless chicken thighs into 1-inch cubes. Add to the marinade, reserving 1/3 for glazing, and toss to coat.
- Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
- Preheat the grill to medium-high heat (about 400°F). Thread the marinated chicken onto the soaked skewers with space between each piece.
- Grill the skewers for 5-10 minutes on each side until golden brown and cooked to an internal temperature of 165°F.
- In the last few minutes, brush skewers with reserved marinade to create a glaze.
- Remove from the grill, let rest for a few minutes, and serve warm alongside your favorite sides.
