Ingredients
  

For the Skewers
  • 1 pound Boneless Chicken Thighs Trimmed and cut into 1-inch cubes
  • 4 pieces Wooden Skewers Soaked in water for at least 30 minutes
For the Marinade
  • 1/2 cup Sweet Chili Sauce
  • 1/4 cup Mayonnaise Can substitute with Greek yogurt
  • 1 teaspoon Garlic Powder Fresh garlic can be substituted
  • 1 teaspoon Chili Powder Smoked chili powder works well
  • 1 teaspoon Onion Powder Can use fresh onion if needed
  • 1 teaspoon Paprika Smoked paprika can elevate flavor
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Freshly Cracked Black Pepper White pepper can be used as an alternative

Method
 

Preparation
  1. Soak the wooden skewers in water for at least 1 hour to prevent burning.
  2. In a large mixing bowl, combine sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and pepper. Whisk until smooth.
  3. Trim and cut the boneless chicken thighs into 1-inch cubes. Add to the marinade, reserving 1/3 for glazing, and toss to coat.
  4. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
  5. Preheat the grill to medium-high heat (about 400°F). Thread the marinated chicken onto the soaked skewers with space between each piece.
  6. Grill the skewers for 5-10 minutes on each side until golden brown and cooked to an internal temperature of 165°F.
  7. In the last few minutes, brush skewers with reserved marinade to create a glaze.
  8. Remove from the grill, let rest for a few minutes, and serve warm alongside your favorite sides.
