- Prep the Patties: In a large mixing bowl, combine ground beef, egg, breadcrumbs, salt, black pepper, dried onion, and Dijon mustard. Mix gently and form into four ¾ inch thick patties.
- Sear the Patties: Heat olive oil and unsalted butter in a skillet over medium-high heat. Add the patties and sear for about 5 minutes until golden brown. Flip and cook for another 5 minutes. Remove from the skillet.
- Sauté the Aromatics: Lower the heat to medium, add diced onion and minced garlic to the skillet, season with salt and pepper, and sauté for about 3 minutes.
- Deglaze the Skillet: Pour in dry white wine and scrape the bottom of the skillet. Allow to simmer for about 2 minutes.
- Create the Sauce: Pour in heavy cream, bring to a boil, then stir in horseradish and grated Parmesan cheese. Adjust horseradish to taste.
- Simmer the Patties: Return the patties to the sauce and simmer for about 5 minutes until they are heated through.
- Garnish and Serve: Remove from heat, garnish with chopped chives, and serve hot.
