Step‑By‑Step Instructions
- In a large bowl, combine all-purpose flour, fine semolina, salt, sugar, and dry yeast, mixing well with a whisk.
- Gradually add warm water at about 105°F (40°C), stirring continuously until a soft, sticky dough forms.
- Turn the dough onto a lightly floured surface and knead it for about 10 minutes until it's smooth and elastic.
- Cover the dough with a damp cloth and let it rest in a warm place for approximately 30 minutes.
- Once the dough has rested, turn it out onto a floured surface and divide it into equal portions.
- Lightly coat the surface of each dough ball with vegetable oil and place them onto a tray.
- Take one dough ball and flatten it into a thin square, roughly 10-12 inches wide.
- Brush the surface with melted butter and lightly sprinkle with fine semolina.
- Fold the edges of the dough towards the center to create a square shape.
- Repeat the flattening and folding process with the remaining dough balls.
- Preheat a non-stick pan over medium heat and lightly oil the surface.
- Once hot, place one msemen in the pan and cook for approximately 3-4 minutes on each side.
- Continue cooking the remaining msemen, adjusting the heat if necessary.
- Once cooked, serve your msemen Moroccan pancakes warm, accompanied by honey, melted butter, or your favorite jam.
