Preparation Steps
- Preheat your oven to 350°F (180°C).
- Heat a skillet over medium heat and add butter. Sauté sliced mushrooms and cleaned leeks for about 5–7 minutes until soft.
- In a mixing bowl, whisk together the eggs with cream, salt, and pepper until fluffy.
- Fold sautéed vegetables and Comté cheese into the egg mixture.
- Reheat the skillet, add butter, and then pour in the egg mixture. Cook for about 2 minutes until edges begin to set.
- Transfer the skillet to the oven and bake for about 15 minutes until firm.
- Broil for 1-2 minutes for a golden top, watching closely.
- Let cool slightly in the skillet before serving warm.
