Preparation
- Finely chop the onions, garlic, and ginger. Cube the mutton into bite-sized pieces.
- Measure out your spices for the aromatic blend.
Cooking
- Heat oil in a pan, sauté onions until golden brown for 8–10 minutes.
- Add ginger and garlic; cook for another 2 minutes.
- Introduce cubed mutton; sauté for 10–12 minutes until browned.
- Add chopped tomatoes, cook for 5–7 minutes until softened.
- Stir in spices and chilies; toast for 2–3 minutes until fragrant.
- Cover mutton with water, bring to boil, then simmer for 45–60 minutes.
- Adjust seasoning, cook for another 5 minutes before serving.
