  • 500 grams Mutton Main protein; substitute with lamb for milder taste
  • 2 medium Onions Finely chopped
  • 5 cloves Garlic Fresh preferred
  • 1 thumb-sized piece Ginger Finely chopped or grated
  • 2 medium Tomatoes Chopped
  • 3 tablespoons Cooking Oil Neutral oil or ghee for richness
  • Spices e.g., cumin, coriander, garam masala
  • 2 slices Green Chilies Adjust for spice levels

Preparation
  1. Finely chop the onions, garlic, and ginger. Cube the mutton into bite-sized pieces.
  2. Measure out your spices for the aromatic blend.
Cooking
  1. Heat oil in a pan, sauté onions until golden brown for 8–10 minutes.
  2. Add ginger and garlic; cook for another 2 minutes.
  3. Introduce cubed mutton; sauté for 10–12 minutes until browned.
  4. Add chopped tomatoes, cook for 5–7 minutes until softened.
  5. Stir in spices and chilies; toast for 2–3 minutes until fragrant.
  6. Cover mutton with water, bring to boil, then simmer for 45–60 minutes.
  7. Adjust seasoning, cook for another 5 minutes before serving.
