Step-by-Step Instructions
  1. Slice the boneless, skinless chicken breasts in half lengthwise, and season with salt and pepper.
  2. Heat butter and olive oil in a large sauté pan, then sauté the chicken for 1-2 minutes on each side until golden brown.
  3. In the same pan, sauté the white parts of green onions and minced garlic until fragrant.
  4. Pour in chicken stock, lime juice, honey, and red pepper flakes, bring to a simmer and reduce sauce by half.
  5. Stir in coconut milk and simmer until well combined, adjusting seasoning as needed.
  6. Return chicken to the pan and cook until internal temperature reaches 165°F.
