Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook for about 5 minutes or until browned.
  3. In the same skillet, add another tablespoon of olive oil, bell pepper, and onion. Sauté for 3-4 minutes.
  4. Stir in minced garlic and cook for an additional minute.
  5. Return browned beef to the skillet, then add black beans, corn, tomato sauce, salsa, elbow macaroni, and beef broth. Stir together.
  6. Bring the mixture to a boil, cover, and simmer for 10-15 minutes.
  7. Remove from heat, serve immediately in bowls, garnished with cilantro if desired.
