Step-by-Step Instructions
  1. Set your Instant Pot to the sauté function and add a splash of oil. Once heated, toss in the diced sweet potatoes and chopped mushrooms, cooking for about 5-7 minutes until softened and fragrant.
  2. Stir in the wild rice and Old Bay seasoning, ensuring everything is combined. Cook for an additional minute.
  3. Pour in the coconut milk and enough broth or water to cover ingredients by about an inch. Stir gently.
  4. Seal the lid and select the manual high-pressure setting. Cook for 35 minutes.
  5. Allow the Instant Pot to naturally release pressure for 10 minutes, then perform a quick release for any remaining steam.
  6. Stir in fresh kale, adjusting seasoning as desired.
