Ingredients
  

Dressing
  • 1/4 cup extra-virgin olive oil substitute with avocado oil for a lighter option
  • 3 tablespoons fresh lemon juice or sherry vinegar adds acidity; more can be added to taste
  • 2 cloves garlic use roasted garlic for a milder taste
  • 1 tablespoon Dijon mustard adds a hint of spice
  • 1 medium sliced red onion shallots can be used for a milder taste
Salad
  • 2 ears fresh corn kernels; frozen corn can be used as a substitute
  • 10 medium small/medium tomatoes ripe heirloom or beefsteak are preferred
  • 16 pieces cherry tomatoes halved
  • 3 pieces peaches pitted and sliced; nectarines can substitute
  • 4-5 cups cubed crusty bread day-old sourdough is ideal
  • 1 cup chopped fresh basil mint can be used as a substitute
  • 1 cup roasted chickpeas optional, adds protein and texture

Method
 

Preparation
  1. In a large mixing bowl, whisk together the dressing ingredients: olive oil, lemon juice (or vinegar), minced garlic, and Dijon mustard. Season with sea salt and black pepper to taste. Toss in the sliced red onion and fresh corn kernels, letting it sit for about 10 minutes.
  2. Add the remaining ingredients: diced tomatoes, sliced peaches, and cubed bread into the bowl. Gently toss all ingredients with the dressing until well combined.
  3. Allow the salad to marinate for approximately 10 minutes to let the bread soak up the flavors.
  4. Just before serving, gently mix in the chopped basil and optional chickpeas, then serve in a large bowl or individual plates.
