Ingredients

For the Meatloaf
  • 1 tablespoon Olive Oil Any light cooking oil may be used instead.
  • 1 medium Onion Substitute with shallots or leeks for a different twist.
  • 2 cloves Garlic Fresh is best, but dried garlic will work in a pinch.
  • 1 pound Ground Chicken Swap in ground turkey or lean beef if desired.
  • 1 cup Seasoned Breadcrumbs Homemade breadcrumbs will enhance the flavor.
  • 1/2 cup Milk Chicken broth can be used for a more savory taste.
  • 1/2 cup Parmesan Cheese You could use Pecorino Romano for a different flavor profile.
  • 1 large Egg For a vegan option, try flaxseed meal mixed with water.
  • 1/4 cup Fresh Parsley Basil can offer an alternative Italian twist.
  • 1 tablespoon Italian Seasoning Individual herbs like oregano and basil can be used instead.
  • 1 teaspoon Salt You can opt for sea salt or reduce for a low-sodium option.
  • 8 ounces Mozzarella Cheese Strings Any melting cheese like provolone works too.
For the Topping
  • 1 cup Marinara Sauce Homemade or jarred varieties are perfect.
  • 1/2 cup Panko Breadcrumbs Regular breadcrumbs can be substituted.
  • 2 tablespoons Butter Replace with olive oil for a dairy-free alternative.
  • 1 cup Shredded Mozzarella Cheese Non-dairy cheese options are also available if needed.

Equipment

  • Oven
  • Skillet
  • Mixing bowl
  • Baking Sheet
  • Parchment paper

Method

Step‑by‑Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a medium skillet, add olive oil and sauté diced onion and minced garlic until soft and fragrant, about 5–7 minutes.
  3. In a large mixing bowl, combine ground chicken, cooled onion-garlic mixture, seasoned breadcrumbs, milk, grated Parmesan cheese, egg, chopped parsley, Italian seasoning, and salt. Mix gently.
  4. Shape two-thirds of the meat mixture into a rectangle on the baking sheet, creating a well in the center for the mozzarella.
  5. Place mozzarella cheese strings in the well and encase them with the remaining meat mixture.
  6. Spread marinara sauce over the top of the meatloaf. Bake for 45 minutes.
  7. Mix panko breadcrumbs, grated Parmesan, melted butter, and parsley for the topping.
  8. After 45 minutes, sprinkle shredded mozzarella and breadcrumb mixture on top and bake for another 15–20 minutes.
  9. Let the meatloaf rest for about 10 minutes before slicing.
