- Preheat your oven to 400°F (200°C). Dice the fresh peaches and toss them with 1 tablespoon of granulated sugar. Spread on a baking sheet and roast for about 15 minutes.
- In a mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 0.5 teaspoon of baking soda, and 0.5 teaspoon of salt. Set aside.
- Cream together 0.5 cup of unsalted butter, 0.75 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until light and fluffy.
- Gently fold in the dry ingredients from Step 2, adding 0.5 cup of whole milk. Stir until just moistened.
- Fold in the roasted peaches gently into the batter.
- Pour the batter into a prepared loaf pan and smooth the top.
- Bake at 350°F (175°C) for 50-65 minutes until a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
