  • ½ cup Mini Chocolate Chips For eyes on the pumpkins.

Preparation Steps
  1. Begin by clearing a clean workspace to roll and decorate your Peanut Butter Pumpkins. Lay out parchment paper on a baking sheet for easy placement of the formed pumpkins. Gather all ingredients.
  2. In a large mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Stir vigorously until smooth, around 2-3 minutes.
  3. Gently fold in the crispy rice cereal until evenly coated, maintaining its crunch, for about 1-2 minutes.
  4. Roll portions of the mixture into 1-2 inch balls and place them on the lined baking sheet, spacing them apart.
  5. Cover with plastic wrap and refrigerate for about 30 minutes to firm up.
  6. Melt the orange candy melts in a microwave-safe bowl with a splash of vegetable oil, until glossy and smooth.
  7. Dip each firm peanut butter pumpkin into the melted orange candy, allowing excess coating to drip off.
  8. While the coating is wet, press mini chocolate chips for eyes and shape leaves using green candy melts.
  9. Allow pumpkins to set at room temperature or refrigerate until the coating hardens completely, about 30 minutes.
