- Prep Tuna: Begin by preparing your fresh tuna steaks. If they are frozen, ensure they are fully thawed in the refrigerator. Once ready, pat the tuna dry with paper towels.
- Make Spice Rub: In a small bowl, combine salt, black pepper, cayenne pepper, garlic powder, paprika, dried thyme, and celery salt. Mix these spices thoroughly to create your seasoning blend.
- Season Tuna: Rub the spice mixture evenly over each side of the tuna steaks. Let the seasoned tuna sit for a few minutes to absorb the flavors while you heat your skillet.
- Heat Skillet: Heat a large cast-iron skillet over medium-high heat and add oil once hot. Ensure the skillet is very hot for perfect searing.
- Sear Tuna: Transfer the seasoned tuna steaks into the skillet and sear each side for about 1-2 minutes for a rare finish, adjusting the time as necessary.
- Make Remoulade: In a bowl, combine mayonnaise, Creole mustard, horseradish, lemon juice, Worcestershire sauce, ketchup, and hot sauce. Mix and adjust seasoning to your preference.
- Slice & Serve: Slice the tuna steaks into ¼-inch thick pieces, drizzle remoulade over the top, and serve alongside your favorite sides.
