- Preheat your oven to 350°F (175°C) and coat a 9x13 casserole dish with non-stick spray.
- In a large mixing bowl, combine the frozen hash brown potatoes with the melted butter until well-coated. Add pimento cheese, sour cream, chicken broth, chopped green onions, salt, and black pepper. Stir until thoroughly mixed.
- Pour the hash brown mixture into the prepared casserole dish, spreading it evenly. Optionally sprinkle grated cheddar cheese on top.
- Bake in the preheated oven for 35 minutes until edges are golden brown.
- Remove from the oven and let cool for about 5 minutes before serving.
